How’d you go about capturing Trilogy’s vibe?

After a delicious brunch and great chat with Trilogy’s manager, I dug deeper into their menu, as well as checked out their social media accounts for inspiration. I wanted to capture the feel of La Jolla by the Sea (where Trilogy is located), as well as the restaurant’s spiritual healing energy.

What’s unique about eating at Trilogy Sanctuary?

The first thing I noticed when I stopped onto their upstairs patio was the beautiful ocean view. The vibe in Trilogy really stands out from the rest of the neighborhood—it truly is a little sanctuary.

What inspired the menu’s psychedelic style?

A combo of Trilogy’s spirit and my own personal style. I built my palette around the restaurant’s mint green color scheme and took a lot of inspiration from other details inside: a large lotus/mandala mural, the rooftop geodesic dome, aerial yoga classes… Simply spending time in their space informed a lot of my choices.

What’s your favorite thing on the menu?

It’s hard to choose, but my favorites are: Trilaquilles (Latin-style eggz on handmade corn tortillas, with pumpkin seed mole, avocado, pico & sour cream) and their cold pressed juices.

What sets Trilogy’s menu apart from the rest?

Five words: conscientious, healthy, delicious, unique, quality.

The Restaurant

How would you describe the Trilogy Sanctuary experience?

Trilogy is meant to be a home for people to decompress and heal—when you eat here, you get the unique experience of dining on a rooftop with ocean views, mellow music and plenty of sunshine.

What about Andrew’s design captures Trilogy’s personality?

He got the essence of something we call “Zen Circus.” Which is to say our spontaneity: brunch after a relaxing yoga class in the morning, cirque show and dance party at night!

What’s one item on your menu that everyone is sleeping on?

The Adora Bowl. It’s our least expensive bowl, but the portion is generous and the flavors are mouthwatering. Plus, it’s loaded with macrobiotics and probiotics!

What item on the menu could you eat every day?

Seared Spring Rolls! Our homemade mint quinoa and peanut sauce make them extra special.

Any secret off-menu items?

The BLT Crepe. It’s made with eggplant bacon, lettuce, roma tomatoes, and drenched in our secret sauce.
